Orange Organic Pork & Peach Stir Fry with Seasonal Vegetables

Organic pork 1 lb1 inch cubes
Soy Sauce 2T
New Garlic 2 stalks
Red Pepper Flakes 1 teaspoon
Salt & Pepper to taste
Egg White ½ whipped
Rice Flour ½ cup
EV Olive Oil ½ cup
Chicken Stock 8 ounces
Peaches 3 medium dice
Oranges 2 juiced and 1/3 zested
Chard 4 stalks, medium slice
Spring onion 1 small, sliced thin
Turnips, spring 1 bunch, sliced thin
Fresh Mint 2 stalks, about 16 leaves, sliced thin
Sesame Oil 2 Tablespoons

Equipment

Knife, Board, High heat burner, Wok or large sauté pan, spoon and tongs or chop
sticks.

  1. Marinate pork in soy while you prepare the other ingredients.
  2. Toss pork in salt and pepper and whipped egg white. Add rice flour to coat pork.
  3. Heat olive oil to high and add pork. Toss in pan till nice brown crust appears (2 to 4 minutes). Add new garlic and red chili flakes sauté for another 2 to 4 minutes or until caramelized.
  4. Add stock to deglaze pan. Add all other ingredients except sesame oil and sauté/stir fry for another 2 to 4 minutes. Toss with sesame oil. Check Seasoning and adjust with salt and pepper if needed. Enjoy!
