1 large Zucchini, small dice
1 large Yellow or Zephyr Squash, small dice
1 Tomato, small dice
1 Bell Pepper, seeds removed, small dice
1 small Chili, minced, seeds removed
1 red onion, chopped
2 c. Whole Milk Greek Yogurt
4 leaves each leaves basil and mint, chopped
1 clove garlic, minced
1 bunch arugula
Salt and pepper to taste
- Combine chopped mint, basil, and garlic with yogurt, season to taste.
- Toss all remaining ingredients with herb yogurt, check for seasoning.
- Build sliders with torn arugula and squash salad.
