Spring Broccoli Salad with a Spicy Vinaigrette

For the Broccoli

1 lb Broccoli (bite size)

  1. Blanch the broccoli in salted water for 1 minute, chill in ice water and strain.

For the vinaigrette

1 oz. Fairyfire Classic Pepper Jelly
1 head Spring Garlic fine dice
1 medium Spring onion fine dice
3 oz Ginger fine dice
2 oz Olive oil
1 C Rice wine vinegar
4 OZ Honey

· If you really like spicy try the Inferno Pepper Jelly instead.

  1. Sweat the onion, garlic & ginger ingredients in the olive oil until fragrant. Remove from heat and whisk in the jelly, vinegar and honey. Chill the vinaigrette and toss with the blanched broccoli.
