Shakshuka

Serves 4

2 Tbsp extra virgin olive oil
2 green peppers, cleaned and chopped
1 red pepper, cleaned and chopped
1 large sweet onion, peeled and chopped
2 medium yellow squash, ends trimmed and chopped
2 cloves garlic, minced
1 pint cherry tomatoes
1 lb 12 oz tomatoes, chopped
1 Tbsp fresh oregano
½ cup fresh basil, chopped
4 farm eggs
1 cup feta or chèvre, crumbled

  1. Heat sauté pan. Add olive oil. Add onions and sauté on medium heat for three minutes. Add garlic, peppers and cherry tomatoes and sauté until peppers are soft. Add crushed tomatoes and oregano and turn heat down. Simmer for 20 minutes stirring frequently.
  2. Crack each egg over the tomato mixture and cover for three to five minutes. Remove from heat and divide into four servings. Top with crumbled cheese and basil and serve with grilled bread on the side.
